Job Description
The Chief Baker is responsible for preparation and baking of all bread items and pastries items assigned to the bakery department according to the established standards of the day to day culinary operations. The Chief Baker is responsible for following all standardized procedures included safety regulations and health and safety procedures through the hotel. Heshe is responsible to keep the immediate work area clean and in order at all times.
He she will
• Be responsible of preparation of bread rolls and other typical bakery products as Danish pastries dough… for the different outlets following standards recipes.
• Complete of daily required food safety records to comply with HACCP Sous Vide SOP's
• Be responsible for procurement scaling preparing and baking all the bakery items.
• Be able to create and develop new recipes in accordance of the establishment standards and customer expectations.
• Check and ensure that all Bakery products are consistently prepared at the highest qualities standards.
• Be responsible of stock levels and stock quality of all Bakery items. The production and stock should be based on the number of customer and different function through the hotel and should be planned with the head pastry chef.
• Will follow the guidelines and requests from the head pastry chef sous chef or executive chef in the most efficient way and meeting up the deadline.
• Consistently check temperatures in foods and follows proper procedures regarding chilling and holding food. All preparations have to be store properly and labelled and a records have to be keep up to date.
Requirements
Our ideal candidate must possess the following knowledge skills and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the job with or without reasonable accommodation using some other combination of knowledge skills and abilities.
• Must have good knowledge of different international and fresh Bakery items
• Must have a complete education training as a Baker
• Must have at least 5 years of practical bakery experience in a 5 star hotel
• Must be able to deal with quality control with high standard of hygiene procedure
• Must have a good attitude be enthusiasm motivated and positive.
• Ability to perform in stressed environment and meet up deadlines.
• Totally embrace the philosophy of guest and customer service and own the guests
• Identify yourself with the hotel’s brand and operating philosophy
• Possess a warm and friendly demeanor
• Strive to achieve satisfaction and delight of internal and external customers
• Are detail oriented and hands on
